Islay Whisky is Scotch whisky produced on Islay or Ìle in Gaelic, on the west coast of Scotland. Islay is one of five whisky distilling localities protected by law in Scotland. The taste is like salted meat, stewy plums, and some saline minerality. Soft, sweet, and gentle, with a salty edge.

There are presently nine working distilleries on Islay, with two more planned to open in the next years. The first recorded distillery was Bowmore, founded in 1779, while the most recent was Ardnahoe, established in 2018.

The Penicillin is an cocktail made with whisky, ginger, honey syrup, and fresh lemon juice. Its name derives from the drug penicillin hinting to the medicinal properties of some of its ingredients. The Penicillin cocktail was created by Sam Ross in the mid-2000s, when he was working at New York City’s famous Milk & Honey bar. Now, the cocktail is served around the world.
