The Old Cuban is an IBA official cocktail and is made with aged rum, fresh lime juice, simple syrup, Angostura bitters, mint leaves, and topped with champagne brut. The cocktail takes inspiration from the Mojito, but it features a few important tweaks that result in a unique flavor experience. The Old Cuban was created in 2001 by famed mixologist Audrey Saunders.

Ingredients

Adjust Servings
6 leaves Mint
1 ounce Simple syrup
3/4 ounce Lime juice
1 1/2 ounce Rum
2 dash Angostura bitters
2 ounce Champagne
1 garnish Mint spring

Instructions

1.
Muddle the mint leaves with the simple syrup and lime juice in a shaker.
2.
Add the rum and bitters and ice, and shake until well-chilled.
3.
Double-strain into a coupe glass.
4.
Top with Champagne and garnish with a mint sprig.
5.
Serve and enjoy!
